Refreshing Cucumber Salad

Here are three simple cucumber recipes that make for great snacks or light meals. This perfect snack is good for 2-3 people.
Ingredients:
- Thinly sliced cucumber — if you use a mandolin be very mindful of the sharp blade to avoid cutting yourself
- 1-2 tablespoons soy sauce
- 1-2 teaspoons fish sauce
- 2 teaspoons sugar
- 2 teaspoons sesame oil
- 1 clove grated garlic
- Chopped green onion
- Toasted sesame seeds
- Optional — red pepper flakes
Steps:
- Place all the ingredients in a sealed container and shake well. Let it marinate for a few hours, or enjoy immediately for a fresher, crunchier texture.
